I had a wonderful visit with owner Jeremy Gruber and his staff who clearly have a passion for what they do. Jeremy and his wife Elizabeth took the plunge and bought Peterson’s Candies in December 2018. After more than eighteen years as an accountant sitting at a desk, now as the candy maker, Jeremy never gets to sit down now. “The days go fast”, he said. With such a huge change in careers there was a lot to learn about candy making. Former owner, and Master candy maker, Winston “Win” Frankson was more than willing to impart his many decades of candy making wisdom on Jeremy. Now, at the age of 93, Win still visits the shop from time to time.
I was able to participate in a bit of “Quality Control” (aka indulging in delicious milk chocolate and peanut butter bark) along with Jeremy as he shared with me the science behind the making of his personal favorite, Sponge candy. Passionate about the process Jeremy excitedly explained to me the science behind the sponge. “It’s a chemistry experiment. Sugar is finicky and if the humidity is too high you can’t make sponge.” Candy making “becomes an art”, comments Jeremy. “Chocolate is temperature sensitive and purer chocolate has a lower melting point.”
